You are not allowed to eat white bread while on Chrono Diet. This week Brsjak will share with you his Buckwheat Bread Recipe. Chrono Diet is very popular. I am very glad that again this month I will share with you one of my friend’s story. This is a guest post from Brsjak who is also my “partner in crime” with this blog. Buckwheat Bread for Chrono Diet. Gluten Free

We all know that white bread and flour is one of the biggest fat gainers today. Everyone is trying to avoid it with all kinds of alternatives. Trough the years I was one of those people who was looking a better way to satisfy my stomach and appetite. I started exploring the buckwheat and the buckwheat flour and after a long time of trying to get a better product I’ve come to this level of greatness.
Don’t be disappointed if you don’t make a nice bread the first time. It takes time to master the technique of making a buckwheat bread.

The process of making the buckwheat bread has two stages, pre-fermentation and post fermentation.



  • 1 kg buckwheat flour
  • 1 L sparkling water
  • 3 Tbsp sesame seed
  • 1 Tbsp flax seed
  • 6 Tbsp chia seed
  • 2 tsp salt
  • 4 Tbsp olive oil

After the fermentation you will need:

  • 2 tsp baking powder 
  • 1 Tbsp baking soda
  • ½ lemon

After you buy all these ingredients you can start making your buckwheat bread.


STEP 1 – Mixing the ingredients

Except for the post-fermentation ingredients, the dry pre-fermentation ingredients are being mixed together.

Add the oil in a glass and fill the rest of the glass with sparkling water. After you add the water, slowly add the mixture to the flour. Gradually add the liquid in the flour and mix till you get a homogenous mixture.

Cover the bowl with a transparent foil and left the dough to ferment for six hours. The fermentation process can last to 12 hours, depending on the ambient temperature, so you don’t have to worry if you left the dough overnight.

STEP 2 – Post – fermentation process

After the fermentation process ends, add the baking powder, the lemon juice and the baking soda. Mix the mixture with an electric mixer around a minute. Put some oil or water on your hands and transfer the mixture to bread mold. You can add some nuts by your choice, and with your hands, you shape the bread. Don’t press too much!

STEP 3 – Baking

Put the mold in the oven for one hour at a temperature of 200 degrees (C), and after that another 15 minutes at a temperature of 180 degrees (C).

After you remove the mold from the oven, extract the bread and roll it in a towel. After the bread cools you can slice it and enjoy it.
